Food Handling - Equipment in Food Handling Site

Food handling areas will require equipment for preparing, cooking, and storing food (as well as tools for cleaning the equipment used in each of these processes). 29 CFR 1910.142(b)(10) and (b)(11) provide details regarding the equipment for these sites:

  • Heating, cooking, and water heating equipment must be "installed in accordance with state and local ordinances, codes, and regulations governing such installations."
  • If a camp operates during cold weather, adequate heating equipment must be provided. (The standard does not provide details regarding the term adequate heating equipment.)
  • Stoves must be provided. The ratio is one stove to every 10 persons or one stove per two families.
  • These stoves must be within an enclosed and screened shelter. (The standard does not provide details regarding the term screened shelter, although in the section about "Windows," you will learn about the requirements for door and window screens.)
